Description:

If you search long enough, you’ll find 1,001 different methods to cook ribs, so it can be incredibly overwhelming to try to figure out the one method that will deliver the lip-smacking, finger-sucking, amazing spare ribs that you’re after. For this recipe we suggest to use a kamado BBQ and prefer “the Bastard” (www.bastard.nl), what’s in the name!

Cut the spare ribs in smaller pieces, fold them gently in two pieces of aluminium foil and bake them at 180 degrees celcius for a total of 45 minutes.

Make a mixture in a bowl with the Dutch Head Premium Rum, Chili sauce, Ketchup, Soy sauce, Worcestershire sauce, Mustard.

Take the alumium packages with spare ribs from the BBQ and open them up, divide the garlic cloves and the mixture between the packages. Close the packages again and leave the packages around 75 minutes on the BBQ at the 180 degrees.

Take the packages of, take the spare ribs out of the alumium foil. Leave the spare ribs to rest for about 5 minutes, hereafter rub them in with the caster sugar and freshly grinded pepper. Put the spare ribs back on the BBQ for 15 minutes, until the meat is tender, turning the ribs occasionally and basting with remaining sauce from the packages. Take the ribs from the BBQ and enjoy with a nice glass of Dutch Head Premium Rum...
